I'm thinking about Escape Plan. Seems like a Talent that a GM would almost need to write an adventure specifically for in order for it to be used. Could it be used for infiltration as well? In and Out?

It could be improvised, if you're down with that sort of thing. The rules set a base DN and then has a list of (example and non-exhaustive) modifiers. It's easy enough (I think) to pick an appropriate DN and go from there, rather than needing to detail every square foot of the complex.

As for infiltration... I'll double check but I don't see why not off the top of my head (aside from it maybe being written with escape in mind). This would kind of make it a "heist" talent. And if there's a pressing reason to keep it "outbound only" there's always knacks.

I was wondering about the warden ability. Since it allows a thief to ignore all penalties, does that mean they see perfectly in the dark?

They don't see perfectly. They just don't suffer penalties. Awareness tests are still required (where appropriate)...
