I think you are underestimating the power of these single attacks. High-circle gauntlets can easily get upwards of +15-20 to a single attack from just two talents. And they are not very likely to get avoided or parried, just due to the much higher attack steps they will have compared to pretty much ...

Well, the extra success for me already implies that they have beaten their attacker to the punch.
If someone parries your attack well enough to counterattack you, then I highly doubt that you can do the thing back to them in the very same action.

the max rank you could have journeyman skills at creation being 1. That's why this was included. You can learn something advanced, but you can't have much practice in it. Also, the LP cost and training times/costs for these talents far outweigh the usefulness of raising them compared to their core ...

We solved it by making those cost 2 points per rank at creation and the max rank you could have journeyman skills at creation being 1.
That was before the errata though, where our GM interjected that it seemed like an oversight and came up with the above rule.

I never limit my players and also don't like to be limited when I play a human. As long as you have the LP and available Versatility Ranks, learn whatever you can.
